Cheesy Pot Pie Casserole



It’s Friday afternoon and I’m racing through Fry’s Grocery in Scottsdale, AZ.  I waited until the very last minute to buy everything for the camping trip I had planned.  As I ogle the massive veggie section of this Fry’s, I start to run down the list of items I need to feed everyone for the 3 day weekend.  I grab an onion here, a bell pepper there, a few carrots, some celery, and the list goes on and on.  I added in some chicken, a little pasta, and some stuff to make things saucy!  This is going to be a healthy twist on some serious pot pie flavors.

Fast forward to Saturday night where I’m prepping and whipping up a casserole that puts most of my others to shame.  This casserole has the flavor of a high calorie dish but the actual calorie count of something much healthier.  Learning the balance of fats to veggies to proteins can be vital when you’re trying to create healthier dishes in your home.  For instance, you can use evaporated milk in place of half and half or heavy cream (depending on the dish).  This allows the dish to stay creamy but with fewer calories.

This dish is not only healthy, but the clean up is a cinch.  The majority of the dish is cooked in one pot through different stages.  This not only prevents a ton of pot and pan clean up, but it means you’re paying more attention to what’s in front of you rather than spreading yourself too thin across the stove top if you’re not comfortable doing that every night.  And who doesn’t love fewer dishes?


Cheesy Pot Pie Casserole


Prep Time:
Cooking Time:
Serves: 10

8 oz whole wheat egg noodles
1 Tbsp Olive Oil
2 red bell peppers, chopped
1 large onion, chopped
2 medium carrots, peeled, quartered length wise and chopped
3 celery stalks, chopped
1 tsp. fresh minced thyme
3 cans low sodium chicken broth (14-16 oz)
1 can fat free evaporated milk (5 oz)
3 Tbsp cornstarch
2 boneless skinless chicken breasts (halved length wise)
8 oz light Mexican blend cheese
½ c. frozen peas
¾ c. Panko bread crumbs
1 tsp. parsley
½ tsp. garlic powder
2 tsp. Salt
1 ½ tsp pepper

1. Bring a pot full of water to boil.  This will be the only pot you use through the whole dish, make sure it’s a decent size one.  Once boiling, add in the pasta and cook it al dente (cooked just enough to bite through, but it’s still firm).  This should take about 5 minutes.
2. Drain the noodles, rinse until cool and then set aside in a bowl.
3. In the original pot, pour in the olive oil and turn up to medium high heat.  Once the oil is hot, stir in the bell peppers, onion, celery, and carrot.  Sprinkle them with just a pinch of salt.  Cook these until the onions are transparent and the carrots are just soft enough that you’re not crunching through them.
4. Toss in the thyme and stir the veggies for another minute.  Transfer veggies to a second bowl.
5. Combine the evaporated milk and 2 of the cans of chicken broth in the pot.  Bring to a boil.  Once it’s at a rolling boil, add the chicken to cook.
6. Once the chicken is cooked through, about 15 minutes or to 155 degrees internally, pull it out of the liquid.  Remove the pot from the hot burner and shred the chicken into bite size pieces.  Heat your oven to 425 degrees at this point.
7. Whisk 5 Tbsp of chicken broth in with the cornstarch.  Bring the pot back to a boil with remaining chicken broth to replenish what boiled off while cooking the chicken.  Add the cornstarch mixture once it’s boiling to thicken.  After 1 minute, remove from heat and whisk in the cheese until smooth.
8. Throw in the chicken, the veggies, the noodles, and the peas.  Season with 1 ½ tsp salt and 1/ ½ tsp pepper.  Mix it well and pour into a 9X13 inch baking dish.
9. Mix the Panko with the parsley and garlic.  Sprinkle on top of casserole.  Put in the oven for 15 minutes or until the top is golden brown and the cheese is bubbling.

Italian Sausage and Peppers

In my recent development of eating healthy and trying to work out, I've taken the plunge with different types of ground turkey.  I am not a huge fan of sausage because of the fat content so when I found Hot Italian Turkey Sausage I said, hey why not?  This is a very simple and healthy meal that's filling and satisfying to the taste buds!  By using a can of tomatoes with just a serving of actual marinara sauce, you're cutting the calories by almost 2/3!

Italian Sausage and Peppers

 *Makes 3 servings

Allergen Tips:


Rice flour noodles are a great g-free option for any pasta dish!


2 Italian Turkey Sausages (you can use real sausage if you'd prefer, it's just not as healthy)
1/2 Onion (sliced)
1 Bell Pepper (sliced, and go for red, orange or yellow for better nutrients)
1 15 oz. Can Diced Tomatoes (undrained)
1/2 C. Favorite Marinara Sauce (this makes it a bit thicker without adding all the calories!)
3-4 Cloves of Garlic (minced)
3 Tbsp. Parmesan Cheese
1 1/2 C. Whole Wheat Pasta (I used Penne)
Salt, Pepper, Italian Seasonings

1. Boil water for the pasta.  Add pasta and some salt when it's ready.  Drain when it's al dente and keep covered until the topping is done.
2. Cook sausage on medium heat for about 8 mins, making sure to turn frequently.  Lower to med-low and cover the sausage.  Cook for about 10 more mins or til the juices run clear.  (I like to poke my casing once so that the juice can run free and it's easier to watch)  When they're done, take them off and cut them into slices.
3. Add a bit of oil to the pan.  Add garlic and cook for about 30 seconds.  Then throw in the peppers and onions.  Cook for around 8 mins.
4.  Add the sausage and the can of undrained tomatoes.  Season with salt, pepper, and italian seasonings.  You can also up the heat a bit with red pepper flakes.
5. Bring to a boil and reduce to simmer for 5-8 mins.
6. Serve on top of pasta and sprinkle with parmesan cheese.

Lasagna Rolls

I've never made a lasagna before because I remember it taking foreeeeeeeeeeeever as a kid.  It doesn't really take much at all apparently! :)  I decided to make individual serving sized ones instead of a whole casserole.

Lasagna Rolls
*3-4 servings

Allergen Tips:
Rice flour noodles are a great g-free option for any pasta dish!

1 Bottle Favorite Marinara Sauce (I only buy Classico)
3/4 lb. Ground Hamburger
1/2 Container of Ricotta
1/4 C. Parmesan
1/3 C. Mozzerella
6 Lasagna Noodles
Salt, Pepper, Garlic Powder, Italian Seasonings

1. Brown the ground beef.  Season with all the above seasonings.
2. Cook noodles until they're done with salt in the water. \
3. Preheat the oven to 375 degrees.
4. Mix the ricotta, and the other cheeses together.
5. Drain the noodles and lay out on the counter or a cutting board.
6. Spread the cheese along each noodle.
7. Add spoonfuls of the sauce to the noodles.
 8. Roll up.
9. Spread a small amount of sauce on the bottom of a 6x9 pan.  Add the noodles.  Top with the rest of the sauce and then add more cheese to the top.
10. Tent tin foil on top and cook for 35 mins. (don't want the cheese to stick to that foil!!!)

Best of Both Worlds Alfredo

The Best of Both Worlds Alfredo


*serves 2

Allergen Tips:


Rice flour noodles are a great g-free option for any pasta dish!
Double check your Alfredo labels for any sneaky gluten ingredients.


Noodles
8-10 oz. Favorite Noodles (I went with Penne)
1 Tbsp. Olive oil
Good shake of Dried Oregano
2-3 Tbsp. Parmesan Cheese

Chicken
1 Boneless Skinless Chicken Breast (cut in half long wise so you have 2 thin "fillets")
 Salt, Pepper, Garlic Powder, Grillmate's Chicken Seasoning

Sauce
1 bottle of Classico Poblano Alfredo
1/2 a Bell Pepper (sliced to size you prefer)
1/8 C. Onion (chopped)

Side of your favorite salsa (pictured with my black bean salsa)

1. Boil water with a touch of salt and cook noodles to your liking.
2. Season chicken with all 4 listed and grill on a George Foreman Grill or sear in a pan.  Slice chicken against the grain and set in microwave to keep warm.
3. If you can multitask, saute the onion and bell pepper with a touch of butter until soft and the onion is transparent.  Add the alfredo and simmer til the noodles are done.
4. Pour noodles into 2 wide rimmed bowls, top with the alfredo, slide chicken onto the sauce and top with the salsa.

Reprieve from Mayo Pasta Salads!

I can't stress enough how much I HATE mayo.  I tend to not ever make anything that calls for it because it's not welcome in my house or my fridge.  That being said, I really really love pasta salads and there aren't too many that are mayo free.  So I got a little crazy with some fat free ranch instead!

Crunchy Ranch Shells



*Makes 4 servings

Allergen Tips:

Rice flour noodles are a great g-free option for any pasta dish!
Double check your ranch label to ensure it's a gluten free option.


8 oz. Whole Wheat Shell Pasta
1/4 C. Broccoli (chopped)
1/4 C. Red Bell Pepper (chopped)
1/4 C. Onion (chopped)
1/4 C. Celery (chopped)
1/4 C. Cheese (diced)
1/4 C. Ranch (give or take, I didn't measure. Depends on how ranchy you like it.) (I also used fat free ranch, the veggies mask the "fat free-ness" of it!)

1. Boil the pasta with some salt in the water.
2. While the pasta is cooking, chop all the veggies and cheese and put in a container.
3. Once the pasta is done, drain and rinse with cold water until the shells aren't warm anymore.
4. Lay the pasta out on paper towels to drain some of the water, getting it as dry as possible.
5. Add pasta and ranch to the veggies and mix well.  Refrigerate for at least an hour to make sure the shells get chilled.  Serve as a side dish or a yummy snack!

A Twist on Alfredo

We eat a lot of spicy food in our house and I wanted to experiment with something that would feed more than 2-3 people.  I came up with an Alfredo casserole that's definitely a keeper.

Spicy Alfredo Casserole
*serves 6-8

Allergen Tips:


Rice flour noodles are a great g-free option for any pasta dish!


2 Boneless Skinless Chicken Breasts
16 oz. Favorite Noodles
1 Bell Pepper (chopped)
½ Onion (chopped)
1 ½ C. Nacho Chees
2 bottles Favorite Alfredo Sauce
Spoonful of Butter or Margarine
1 Tbsp. Chili Powder
Salt, Pepper, Garlic Powder, Grillmate’s Chicken Seasoning
 
1. Set oven to 375°.
2. Cook noodles to your liking with some salt in the pot.
3. Cook bell pepper and onion in a skillet on med heat with the butter until they’re soft.
4. Add chicken and seasonings to taste (not the chili powder).
5. Warm alfredo, nacho cheese, and chili powder so they mix well.
6. Throw everything together and put in a 9X13 baking pan.  Cover with foil and cook for 20 mins.

Full of Flavor, Classic Chicken Alfredo

Who doesn't enjoy a nice $13 dish of chicken alfredo from Olive Garden now and then?  I certainly don't appreciate the price, so I went ahead and made my own fancy version full of flavor and spices for a portion of the price!

Chicken Alfredo
*serves 2-3

Allergen Tips:

Rice flour noodles are a great g-free option for any pasta dish!


Double check your Alfredo labels for any sneaky gluten ingredients.


Sauce
1 Boneless Skinless Chicken Breast (diced)

½ C. Onion (chopped or strips)
½ C. Bell Pepper (chopped or strips)
Spoonful of butter or margarine
Salt, pepper, garlic powder, and Grillmate's chicken seasoning
1 Bottle of favorite Alfredo Sauce (I’m a fan of Classico)

Noodles
Favorite type of noodle (I try to switch it up with Rotini, Penne, Angel Hair, Shells, or Fettuccine to make things fun)
1 Tbsp. Olive Oil
Good shake of Dried Oregano
2 Tbsp. Parmesan Cheese

1. Cook noodles with a sprinkle of salt.
2. Cook onion and bell pepper with butter in pan on med heat for a few mins to soften them up.
3. Add chicken and spices and cook until chicken is fully done.
4. Add alfredo sauce to chicken.
5. When noodles are to your liking, drain and add the oil, oregano, and cheese.
6.Once the sauce is hot, divide the noodles into wide mouthed bowls and pour sauce on top.

Stuffed Chicken with Black Bean Salsa

Well here I am after trying like 4 different methods on sharing my recipes.  I'm in the progress of making a cookbook website but let me tell you how much work that actually is!  I figure this might be an easier way to share my culinary adventures with everyone. :D

Last night's dinner (since it came out way more awesome than I figured):

Stuffed Chicken with Black Bean Salsa
*Serves 2

Black Bean Salsa
1 Can Black Beans (drained and rinsed)
1 Can of Rotel Tomatoes (choose your level of spicy, green chiles or habañero)
1 Can of Corn (drained and set aside 1/8 of a cup)
1/2 of a Bunch of Green Onions (chopped)
1/4 C. Cilantro (chopped)
1/8 C. Yellow Onion
1/8 tsp. of each Salt, Pepper, Garlic powder
(you can add chili powder if you'd like it to be more spicy, but it's more for flavor)
Set in fridge to chill for at least 3-4 hours

Stuffed Chicken (this can be done with ANY choice of stuffing!!)
2 Boneless Skinless Chicken Breasts (cut a pocket in the side as large as you can.  If your not comfortable with that, you can pound it and roll it over.)
1/8 C. Corn you already set aside
1/8 C. Fresh Roasted Green Chili (chopped OR a whole 4 oz. can of green chili)
1 Jalapeño (seeded and chopped)
Small handful of Cilantro (chopped)
1/4 C. Cheese (I use pepper jack)
 Salt, Pepper, Chili Powder, Garlic Powder to taste

1.  Make your salsa ahead of time so it has time to chill.
2.  Set oven to 375°
3. Cut the pocket in both breasts.  Mix the corn, green chili, and jalapeño, and half of the cheese together and stuff both breasts.  Pin the breasts closed with toothpicks.
4. Spray your pan with non stick spray. (I use a 6X9 Pyrex baking dish)  Sprinkle the bottom with all 4 spices.
5. Put chicken in the pan with the open, pinned sides facing each other.  Sprinkle the top of the chicken with the spices and put in the oven for 55 mins.
6. With 12 mins left of the timer, pull the oven rack out and top chicken with chopped cilantro and then the rest of the cheese.
7. Serve chicken with the salsa on the side.
